The designers Patrick Jouin and Sanjit Manku said that they “have designed a space totally adjusted with Alain Ducasse’s naturalness cuisine and his concern for the perfection of the welcome,”

As the French chef said, Ducasse’s Plaza Athénée Restaurant “derived from the notion of nourishing oneself in a healthier and more natural way”, as he believes that naturalness is a necessity, and that now is time to implement it in haute cuisine, incorporating the entire process of cooking, from harvest to table service.
