Alain Ducasse is one the most renowned chefs in the world. The Michellin-starred french chef recreated his Plaza Athénée luxury restaurant with a new menu and with a new interior by Jouin Manku. As a reflection of Alain Ducasse philosophy, the new interior decor by Paris based design duo Jouin Manku, have created a interior decor that both distills Ducasse’s philosophy of naturalness into a restaurant setting and undercuts traditional luxury with wry references to fine dining.
Aware to the smallest detail, Jouin Manku and Alain Ducasse define a very straight line in interior decor and in the menu that sums up in one way of vision – the natural. The designers Patrick Jouin and Sanjit Manku said that they “have designed a space totally adjusted with Alain Ducasse’s naturalness cuisine and his concern for the perfection of the welcome,”
As the French chef said, Ducasse’s Plaza Athénée Restaurant “derived from the notion of nourishing oneself in a healthier and more natural way”, as he believes that naturalness is a necessity, and that now is time to implement it in haute cuisine, incorporating the entire process of cooking, from harvest to table service.
Now, talking about the most important thing in a luxury restaurant, the menu and the food itself. Citing Alain Baraton’s mantra of “no garden, no cook”, Ducasse maintains an intimate relationship with his suppliers, meaning only the freshest, most ethically acquired produce for his restaurant. Since both vegetables and fishing enjoy seasonality, the menu is designed around the availability of varieties of each, with a rotating roster of ‘cereals’, including buckwheat, quinoa, black rice and lentils.
